today my father turned 53. i chose to wine and dine him in recognition of his illustrious years on this earth. plus it takes a REASON for me to get in the kitchen.
even though it was an important occasion, i experimented. let me add a little sidenote and say that i cook like i live my life. throw a little of this in, try some of these, spice it up a bit and usually it turns out scrumptious.
we started with a grilled sweet potato and mango salad tossed with a lime vinaigrette and a hint of chopped mint. the main course consisted of baby corn with butter and garlic and a macadamia nut-encrusted tilapia fillet served with a pineapple-peppercorn chutney.
dessert was gooey warm fudge brownies with vanilla bean ice cream.
